Ingredients

2 Bunches of Asparagus
2 Tbsp Olive Oil
4 Large Free range or Organic Eggs
¼ Tsp Sea Salt
¼ Tsp Black Pepper
¼ Tsp Chili Flakes (omit if needed)

Directions

Preheat the oven to 180 C. Line a baking tray with metal foil large enough that you will be able to fold over and create a tent for the asparagus.
Take the asparagus and arrange onto the foil, then drizzle with some of the olive oil, around one tbsp.
Season with the salt and pepper.
Cover with the foil by creating a tent and place in the centre of the oven for around 8-10 minutes or until the asparagus are soft and cooked as you like them.
Heat the remainder of the olive oil in a frying pan and fry the eggs.
Take the asparagus out of the oven and arrange on a plate, place the fried eggs on top, season with salt and pepper and then for an added zing you can sprinkle the red chili flakes over the top.
