Ingredients

1/2 cup rinsed quinoa

1 cup unsweetened almond milk

1/2 teaspoon vanilla extract

1 tablespoon hemp seeds

1/2 cup mixed berries (blueberries, raspberries, strawberries)

½ sliced red apple

1 tablespoon almond or peanut butter
-
1 teaspoon honey or maple syrup (optional)
Directions
Cook the quinoa. In a small saucepan, bring the quinoa and almond milk to a boil.
Reduce the heat, cover, and simmer for about 12-15 minutes, or until the quinoa is tender and the liquid is absorbed.
Stir in the vanilla extract and hemp seeds, then remove from heat and let sit for 5 minutes
Assemble the bowl
Divide the cooked quinoa between two bowls. Top each bowl with mixed berries, a drizzle of almond or peanut butter.
Optional sweetener: If you prefer a sweeter breakfast, drizzle each bowl with a small teaspoon of honey or maple syrup.
Serve warm and enjoy!
