One Pot Chicken Soup

Warm from the inside out with this gorgeous hearty winter soup.

Ingredients
- 2 large organic chicken breasts
- 1 red or white onion, diced
- 2 cloves garlic, minced
- 2 large carrots, diced
- 4 sticks celery, diced
- 3 sprigs fresh thyme
- 1 tablespoon turmeric
- Pinch of cayenne pepper
- Pinch of sea salt
- pinch of ground black pepper
- 1 Bay leaf
- Juice of 1 freshly squeezed lemon
- 500mls organic chicken bone broth or chicken stock
Directions
In a shallow pan, saute all ingredients (except chicken breasts), add the bay leaf and bone broth/stock, simmer for a few minutes.
Transfer to a slow cooker or deep pan. Add chicken breast and bone broth/stock. Cook on a medium heat on the stove or on low to medium if you are using a slow cooker. Cook until chicken nice and tender. Once the chicken is tender you can pull it apart (shred gently) with a fork.
- Serving suggestion: Enjoy with a side of mashed sweet potato or a serving of cauliflower mash.

How long will the soup keep for ?
If you refrigerate any left-overs it's advisable to only reheat once or twice.
Can i substitute the chicken ?
Of course, you can add whatever meat you like. you can also swap to beef bone broth if you want to add a beef joint. The choice is yours.
