These are such a delightful healthy treat at any time of the day.
Ingredients
- 1 tsp of grated Lemon zest
- Juice of 1 freshly squeezed Lemon
- 15 Medjool dates
- 4 finely chopped Apricots
- 1 cup chopped Almonds
- 1 cup raw chopped cashews or macadamias
- 1 tbsp chia seeds
- 1/2 cup unsweetened desiccated coconut
- 3 tbsp Desiccated coconut
Directions
- - Add all ingredients except the desiccated coconut, to a mixer or food processor
- - Mix for 2-3 minutes until you reach the desired sticky mixture.
- - Transfer to a bowl.
- - Wet hands slightly and scoop about a tablespoon of the mixture into palms.
- - On a plate sprinkle the desiccated coconut, add more as desired.
- - Roll into balls and dip into the coconut, pressing on each side to coat all sides evenly.
- -Now press balls gently down to form round disc shapes.
- -You should get about 8-10 small rounds.

Store in an airtight container for up to a week (in the fridge).
