This healthy apple crumble is a favourite with the whole family. It is free of refined sugar, eggs, gluten and grains, but you would not know it because it tastes amazing. If you really want to treat yourself team it with some vanilla custard or ice cream or if you want to keep it on the healthier side it is great with some coconut dairy free icecream or coconut yoghurt.
Ingredients

6-7 Medium sized Sweet Tart Apples such as Pink Lady.

2 Tbs Apple Cider Vinegar

1.5 Tbs of Maple Syrup

1 Tsp of Fresh Lemon Juice

A pinch of Sea Salt

3 Tbs of butter or coconut oil

80 grams Blanched Almond Flour

40 grams Cassava Flour
-
1 ½ Tbs Tapioca Flour

½ Cup of Coconut Sugar
-
½ Cup of Toasted walnuts or pecans

½ Tsp Ground Cinnamon

¼ Tsp Fresh grated nutmeg

¼ Tsp Sea Salt

80 Grams butter or coconut oil
Crumble Topping
Directions
Preheat the oven to 350 degrees!
Peel the apples and de core. Stand the apple upright and cut downward so the apples are cut into large chunks, then chop each apple section into smaller bit sized chunks.
Put the chopped apples into a large bowl with the apple cider vinegar, maple syrup, lemon juice and salt. Stir well so the apples are well covered.
Put the apple mixture into a large 9 inch round baking dish or section into smaller individual dishes.
Dot small pieces of cubed butter around and between the apples.
Put the apples into the centre of the oven and bake at 350 degrees until bubbling. Stirring them gently occasionally.
Crumble Topping
While the apples are baking in the oven you can prepare the topping. Please the almond, cassava and tapioca flours into a large mixing bowl. Mix in well.
Add the nuts, coconut sugar, cinnamon, nutmeg and salt to the flour and stir in well.
Melt the butter and stir into the mixture until it is all well combined.
Remove the apples from the oven and crumble the topping over the apples, covering evenly.
Return to the oven and bake until the crumble is a deep golden colour and the apples are bubbling and soft. This can take anywhere from 40-55 minutes depending on your oven so keep an eye on them.
Remove from the oven and let it cool slightly, this way the crumble will become crisper while the apples still stay hot underneath.
Serve warm or at room temperature with ice cream, yoghurt or custard.
Recipe Note
If you do not have Cassava flour to hand you can replace this with any gluten free flour or rice flour.
The Apple Crumble will keep in the fridge for up to 3 days or can be frozen for 1 month.
