This quick and easy vegan chocolate mousse is the perfect desert to compliment a healthy diet and not derail any weight loss goals. You can make it in advance, store in the refrigerator and serve after dinner when you need that little chocolate fix!

Ingredients

125 grams Dark Chocolate - at least 60% cacao.

2 Large Ripe Avocados (around 230 grams each)

3 Tablespoons of unsweetened cocoa powder.

¼ Cup of unsweetened almond or coconut milk.

1 Teaspoon of Vanilla Extract

A pinch of Sea Salt

Optional - This depends on how sweet you would like your mousse to be, but you can add 1 teaspoon of either agave nectar or maple syrup.
Directions
Break up the dark chocolate into chunks and put it in a microwavable dish. Microwave the chocolate in 10 second bursts, stirring in between each one and watching carefully to make sure it does not burn. Once nearly melted, remove from microwave and stir well until totally smooth.
Put the melted chocolate to one side to allow to cool to a Lukewarm temperature.
Take both avocados and remove the pits, scoop out the avocado flesh and place into a food processor or blender.
Add the melted chocolate, cocoa powder, milk, vanilla extract and salt then blend until it becomes a smooth creamy texture.
Taste test the mousse before removing from the blender, at this point if you feel it needs to be sweeter this is when you can add the agave or syrup.
Spoon into four glasses and either eat immediately or place in the refrigerator, this will chill the mousse and it will thicken up more.
Add toppings such as shaved coconut, cacao nubs, dark chocolate shavings or berries to decorate.
Recipe Note
The mousse can be stored in the refrigerator for up to 5 days or you can also freeze the mousse for up to one month.
