Overnight oats with a tropical flavour, a healthy quick and convenient breakfast or snack that you can make well in advance so a great option for meal prepping or kids breakfasts if you do not have the time to prepare anything eleborate in the morning.

Ingredients

1 Cup of Gluten Free rolled oats

2 Tsp of Chia Seeds

1 Cup of coconut milk or non dairy milk of your choice

⅓ Cup of Greek yoghurt

1 Tbs Maple Syrup

1 Tsp Vanilla Extract

1 Cup of Fresh Chopped mango

½ Sliced Banana
-
10 gram sachet Luminance Collagen Peptides

Chopped Fresh Mango or other fruits

Toasted coconut flakes

Directions
In a large bowl mix together the oats, chia seeds, yoghurt, maple syrup, vanilla extract and collagen until well combined.
Spoon the oats mixture evenly into 2 8 ounce jars until they are half full.
Chop the mango and slice the banana and put a layer of both on top of the oats then add the remaining oats mixture to the jars.
Cover the jars with a tightly screwed lid or cover tightly with gladwrap.
Put the jars into the refrigerator for at least 8 hours or overnight.
When ready to use, remove from the refrigerator and top with the mango, banana, flaked coconut, a sprinkle of chia seeds and if you prefer it a little sweeter you can also add more maple syrup to the top.
Recipe Note
How long will these overnight oats keep?
Overnight oats if kept in airtight containers can be kept for 4-5 days in the fridge so they make a great breakfast idea if you are meal prepping in advance.
Do I have to use Mango?
You can use any fruit you prefer and if you do not have any fresh mango or fruit to hand it works just as well with frozen fruit.
I don't eat dairy?
If you don't or can't eat dairy then you can substitute the greek yoghurt for coconut yorghurt. Please note the oats will not have the same protein content without the greek yoghurt.
