This healthy mediterranean lunch recipe makes a delicious crunchy salad. This salad is packed full of goodness with onion, cucumber, tomatoes, cauliflower rice, and feta cheese to name a few ingredients.
Our recipe makes an easy 'go to' lunch salad for the busy working mum.
Ingredients

½ cup Cauliflower rice
- 1 Tbsp avocado oil

Salad Mixture of choice

1 large cucumber chopped
- 1/2 Avocado

½ medium red onion chopped finely

2 medium tomatoes coarsely chopped

½ cup feta cheese crumbled

¼ cup kalamata olives pitted
- 2 Tbsp avocado
- 3 Tbsp red wine vinegar
- 1 tsp balsamic vinegar
- 1 Tbsp lemon juice or lime juice if preferred
- 1/2 tsp oregano dried
- 1 clove garlic crushed
- sprinkle of chilli flakes if desired
- salt and pepper to taste
Directions
Prepare the cauliflower rice. Make your own or Buy snap frozen for convenience.
Chop or dice individual salad items and mix gently in a large bowl
Prepare the salad dressing and drizzle over the salad to taste…yum
Recipe Note
For an additional boost to your protein intake you can add 1/2 a grilled chicken breast or some fresh fish to your salad.
This recipe can be enhanced using a pinch of chilli flakes, if you wish to boost the flavour and turn up the heat!
