Such great, quick and easy pancakes for that breakfast or treat when you are in a hurry. They are paleo so gluten free, dairy free and grain free which makes them super healthy and really good if you are trying to lower inflammation in your body.

Delicious fluffy breakfast pancakes made from only 3 ingredients so a fabulous fast healthy breakfast for those mornings when you want something tasty but do not have much time. These fantastic pancakes are gluten free, dairy free and vegan so make a great healthy breakfast or snack option.

Ingredients

1 Banana
2 Large eggs
½ Tsp Ground Cinnamon
1 Sachet of Luminance Collagen Peptides
2 Tbs Coconut Oil
Fruit or Berries of choice

Directions

Mash the banana in a bowl
Whisk the eggs together
Stir banana and eggs in together until well mixed
Add cinnamon and sachet of Luminance Collagen Peptides and stir
Heat oil in a non-stick frying pan
Pour 2Tbs of the pancake batter into the pan
Cook for 1-2 minutes or until golden brown coloured underneath then flip and cook for a further 1-2 minutes
Serve with berries, fruit and/or coconut yoghurt or greek yoghurt
