This Blueberry Chia seed pudding is a perfect Whole30 breakfast, lunch or snack that you can prepare ahead of time. Our Chia pudding is gluten free, dairy free and refined sugar free, who knew you could get so much enjoyment from something that is so good for you!
If you are eating the Paleo, Whole30 way or just spending a few weeks cutting out grains from your diet this Blueberry chia pudding is a great way to start the day, preparing it ahead of time means no rushing around in the morning preparing breakfast, just remove from the refrigerator and eat.
Our chia seed pudding is incredibly quick and easy to make and the recipe is easily adaptable if you prefer to add or remove something to your taste. Any berries can be used if you are not a fan of blueberries, we love blueberries because they are so rich in antioxidants and a total super food. If possible try and use frozen wild or organic blueberries, these hold the most nutrients and do wonders for our body and mind.
For the milk, we have used full fat coconut milk in this recipe but almond milk works just as well, you can also try using oat milk etc if you do not want to use a nut based milk.

Ingredients

1 x 400ml Can of Coconut milk (you can use full or Lite for this recipe)

1 tsp honey or maple syrup - omit if cutting all sugars from diet.

1 tsp Vanilla Extract

6 tbsp of Chia seeds

1 Cup of frozen blueberries (preferably wild or organic)

2 tbsp water
Directions
In a large mixing bowl add the coconut milk, vanilla extract and chia seeds and mix well.
Once mixed thoroughly, place the bowl in the refrigerator to chill for at least 6-8 hours or preferably overnight.
While the chia seeds chill, prepare the blueberry sauce by adding the frozen blueberries and the water to a small pan and warming over a medium heat for about 2-4 minutes or until the blueberries begin to break open.
Once the blueberries begin to break apart you can then use either a fork or a potatoe masher to mash the blueberries down a little.
When the blueberries are mashed, leave in the pan, reduce the heat to low and simmer for a further 10 minutes, stirring often so they do not stick to the pan.
After 10 minutes remove the pan from the heat and allow the blueberries to cool completely.
Once the chia pudding has completely set either after 8 hours or the next day, you can construct your blueberry chia pudding into little dishes or pots. Put a few tbsp of chia pudding into the bottom of your jar or pot, then add a good helping of the blueberry sauce, you can then add more frozen or fresh berries to the top if you want to make it pretty, we also add a sprinkling of shredded coconut.
All that is left to do then is eat!
