Ingredients

1 cup chopped Zucchini

1 cup pearl-size or baby fresh mozzarella balls

3 tablespoons chopped soft sun-dried tomatoes

2/3 cup thinly sliced fresh basil

5 large eggs, beaten

1/2 cup thinly sliced red onion

2 tablespoons avocado oil

½ teaspoon sea salt

¼ teaspoon freshly ground black pepper

1 Sachet Luminance Collagen Peptides
Directions
Dice Zucchini, Onion, Mozzarella, Sundried Tomatoes & Basil.
Add 5 eggs to a bowl and beat gently. Add in salt, pepper. Add more to taste.
Add avocado oil to deep pan over heat.
Combine all ingredients together and pour into a non stick deep pan. Cook until browned.
Enjoy as a breakfast or fresh side salad for a delicious lunch.
